Part 1: Prepare the Dough

The instructions below are for using an electric mixer.

Dough Ingredients
4 cups Flour, enriched, unbleached, all-purpose
3 Eggs
3/4 cup Vegetable Oil (preferably Canola)
1 cup Water, warm (warmer than "luke warm")
pinch Salt

1. Place the 4 cups of flour into the mixing bowl.

2. Break the 3 eggs.
Use separate dish to break egg in case egg is not in acceptable shape (shell fragments, cloudy, bloody, etc.).

3. Add the eggs to the flour in the mixing bowl.

4. Add the 3/4 cup of oil to contents of the mixing bowl.

5. Add the cup of water to the contents of the mixing bowl.

6. Add a pinch of salt to the contents of the mixing bowl.

7. Install dough mixing hook into the mixer.

8. Mix for at least 5 minutes until the dough has rubbery texture (like putty).
Adjust texture by adding a little more flour if too moist or oil and water if too dry.

If you don't have a mixer capable of kneading dough, it can also be kneaded by hand:

  • Make a "well" of the flour on work surface.
  • Slowly add other ingredients and mix well with hands.
  • Knead mixture until dough has rubbery texture (like putty).
  • Adjust texture by adding a little more flour if too moist or oil and water if too dry.

9. Make balls of dough about the size of a tennis ball (about 6-8 balls).

10. Oil the outside of the dough balls and wrap the balls in plastic wrap. Set aside in a warm place while making the filling.
